Simplify With Nutritious One Pot Meals


Crock Pot Turkey Chili Recipe

Recipe Yields 10 Servings


This one pot meal brings all the warmth of winter comfort food with great nutritional value, loaded with vitamins and antioxidants.

Surprisingly low in calories per 2 1/2 cup serving and big on flavor.

This chili recipe packs a protein punch of 25 grams per serving!

Ingredients:

1 Tbs Olive Oil

2 lbs Ground Turkey- 99% Fat Free. (cook in a skillet with the 1 tbs of olive oil)

1 ½ Large Onions, chopped (roughly 3 cups)

7 Cloves Garlic, minced

1 ½ Bell Peppers, chopped (green, red or combo)

2 -15 oz Cans Red Kidney Beans - drain and rinse well (black or white beans can be substituted)

1 28 oz Can Crushed Tomatoes. (I like Tuttorosso crushed tomatoes with basil)

1 14 oz Can of Diced Tomatoes

½ Cup Chicken Broth

4 Tsp Chili Powder

1 Tsp Cayenne Pepper

1 Tsp Paprika

2 Bay Leaves


*For Extra Heat Add – 2 Jalapeno Peppers seeded and minced (4 calories per pepper)


What You Need:

Slow Cooker Crock Pot that has the capacity to hold at least 6 quarts. I have a 6 quart crock pot and the recipe fills the pot to the very top.


Instructions:

Prep all ingredients

Cook Ground Turkey in Olive Oil in a large skillet or frying pan

Mix all spices (chili powder, cayenne pepper, paprika) into the 28 ounces of Crushed Tomatoes with Basil so spice is distributed evenly

Add all ingredients into the crockpot and cook on low for 8 hours or high for 4 hours


*Chili can be served with shredded cheddar or Mexican cheese and/or a dollop of sour cream, calories need to be added for the addition of these ingredients. Please check container labels for calorie and nutrition information.
